
AJ’s Mediterranean Whipped Feta Dip

Serves: 10-12 Servings

Ingredients:
- 1-1/2 tsp. salted butter
- 2-1/2 tbsp. extra virgin olive oil, divided, plus more to drizzle
- 2 tbsp. panko
- 2 tbsp. chopped pistachios
- 1 can (14.5 oz) fire-roasted tomatoes, drained
- 2 cloves garlic, minced
- 5 tbsp. fresh lemon juice, divided
- 2 pkgs. (5 oz) crumbled feta cheese
- 2/3 cup Greek yogurt
- 1/2 tsp. ground black pepper, or to taste
- 2 tsp. honey
- Pita chips, cucumber slices, carrot slices, to serve
How to Make:
- In a small skillet over medium heat, heat butter and 1-1/2 tbsp. olive oil until butter is melted and mixture starts to bubble. Add panko and pistachios, cook until toasted and golden. Remove from heat and set aside.
- In a small bowl, combine tomatoes, garlic, and 1 tbsp. lemon juice. Mix well and set aside.
- In a bowl or food processor, combine feta, yogurt, 1 tbsp. olive oil, 2 tbsp. lemon juice, and pepper. Blend for 30 seconds, then scrape down sides. Blend an additional 30 seconds to 1 minute until the mixture is smooth.
- Spread feta mixture on a serving plate and top with seasoned tomatoes. Drizzle with honey and olive oil, and sprinkle with toasted pistachio panko.
- Serve with pita chips, cucumber slices, and carrot slices.
