BBQ Ranch Style Pasta Salad

  • 8 oz. box penne
  • 1/4 cup BBQ sauce
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1 tbsp. parsley
  • 1/4 tsp. dill
  • 3 cups grilled, chopped chicken breast
  • 1 can (15.25 oz) golden sweet whole kernel corn, drained
  • 3/4 cup chopped red onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon crumbles
  1. Cook the penne according to package directions. Drain, then rinse under cold water until penne is cooled. Set aside.
  2. In a large bowl, mix the BBQ sauce, mayo, sour cream, parsley, and dill.
  3. Add the penne, chopped chicken breast, corn, and red onion. Mix well to coat evenly.
  4. Transfer pasta salad to a serving bowl and top with shredded cheddar cheese and bacon crumbles. Can be made up to two days ahead.

Notes: Fresh herbs can be used in place of dried herbs (2 tbsp. for parsley and 1 tsp. dill).
