
BBQ Ranch Style Pasta Salad

- 8 oz. box penne
- 1/4 cup BBQ sauce
- 1/4 cup mayo
- 1/4 cup sour cream
- 1 tbsp. parsley
- 1/4 tsp. dill
- 3 cups grilled, chopped chicken breast
- 1 can (15.25 oz) golden sweet whole kernel corn, drained
- 3/4 cup chopped red onion
- 1 cup shredded cheddar cheese
- 1/2 cup bacon crumbles
- Cook the penne according to package directions. Drain, then rinse under cold water until penne is cooled. Set aside.
- In a large bowl, mix the BBQ sauce, mayo, sour cream, parsley, and dill.
- Add the penne, chopped chicken breast, corn, and red onion. Mix well to coat evenly.
- Transfer pasta salad to a serving bowl and top with shredded cheddar cheese and bacon crumbles. Can be made up to two days ahead.
Notes: Fresh herbs can be used in place of dried herbs (2 tbsp. for parsley and 1 tsp. dill).
