
Big Apple Mini Cheesecakes

Ingredients:
- 4 apple cinnamon fruit and grain cereal bars
- 1 (11.2oz) no bake cheesecake mix
- 5 tbsp salted butter, melted
- 11/2 cups cold milk
- 1 tbsp lemon juice concentrate
- 1 Granny Smith apple, sliced
- 1 tbsp cinnamon sugar
- Optional: coarse red sugar
How to Make:
- In a medium bowl, mash up the fruit and grain bars using a fork or your hands. Carefully toss them with the melted butter, but make sure it’s not
too hot! Scoop the mixture into 12 paper-lined muffin cups and press it down flat using the bottom of a measuring spoon. - With the help of a grown-up, beat together the cheesecake packet and milk according to package directions. Divide the batter evenly into each muffin cup.
- Chill your cheesecakes in the fridge for 1 hour. While you wait, toss your Big Apple slices with the tablespoon of lemon juice and sprinkle with cinnamon sugar.
- Put on a show for your zoo guests and garnish each cheesecake with the apple slices and coarse red sugar, if desired.
