Bridget’s Chicken and Waffle Kabobs

Serves: Makes 8 Skewers

Ingredients:

  • 1/4 cup red raspberry preserves
  • 1/2 cup Greek nonfat
    raspberry yogurt
  • 32 pieces frozen popcorn chicken
  • 4 frozen cinnamon waffles,
    defrosted
  • 8 skewers

How to Make:

  1. In a small bowl, stir together the raspberry preserves and yogurt. Let it chill in the refrigerator.
  2. Place the popcorn chicken on a parchment-lined baking tray, and with the help of a grown-up, bake it at 400°F for 15 minutes.
  3. While the chicken cooks, carefully cut each waffle into 6 small wedges, the perfect size for a troll.
  4. Once the chicken is done, have a grown-up help you place 4 pieces of chicken and 3 waffle wedges on each skewer, alternating between the two. Place all of your skewers back on the baking tray and bake them in the oven for about 7 more minutes until toasted.
  5. Drizzle the skewers with your raspberry yogurt mixture or serve
    it on the side as a dip.
