Chris’ Fire Roasted Bean Dip

Serves: 14 Servings

  • 1 can (14.5 oz) fire-roasted tomatoes with green chiles, with juice
  • 1 can (15.25 oz) golden sweet whole kernel corn, drained
  • 1 can (15.5 oz) black beans, drained and rinsed
  • 3 cloves garlic, minced
  • 1 orange bell pepper, seeded and diced (about 1 cup)
  • 1/2 small red onion, diced (about 1/2 cup)
  • 1/3 cup Italian vinaigrette dressing
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp. paprika
  • 2 tbsp. finely diced jalapeños (optional)
  • Salt and pepper, to taste
  • 1 whole avocado, diced
  • Tortilla chips, to serve

How to Make:

  1. In a medium bowl, combine tomatoes, corn, beans, garlic, bell pepper, onion, dressing, cilantro, paprika, and jalapeños (if desired). Mix well. Season with salt and pepper to taste. Gently fold in diced avocado.
  2. Refrigerate for 2 to 4 hours to allow flavors to mix. Serve with tortilla chips.
