Coconut Lemon Swirl Cake

Ingredients

  • 2 cups all-purpose baking mix
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup lemon pie filling
  • 1 cup whipped topping
  • 1/2 cup sweetened coconut flakes or shreds

How to Make

  1. Preheat oven to 350°F. Grease a 9×9-inch baking pan with cooking spray and set aside.
  2. Whisk together baking mix, sugar, and baking powder in a large bowl. Make a well in the center of the dry ingredients and add milk, eggs, oil, and vanilla extract. Whisk until smooth.
  3. Pour batter into prepared pan. Spoon lemon pie filling in small dollops over the batter and swirl using a knife or toothpick.
  4. Bake until golden-brown and cake is set, about 30–35 minutes.
  5. Let the cake cool completely on a wire rack. Top with whipped topping and sprinkle with coconut.
