Dutch Oven Cheesy Potatoes

Ingredients:
- 6 slices of thick cut hickory smoked sliced bacon, chopped
- 4 large potatoes, thinly sliced
- 1 cup shredded extra sharp cheddar cheese
- 1 teaspoon salt
- 1 cup cheddar jack, shredded
- Chopped fresh scallions, for garnish
How to Make:
- Preheat oven 375°F. Set Dutch oven over medium heat. Add bacon and cook, stirring occasionally, until browned and crisp, about 4-5 minutes. Transfer to a paper-towel-lined plate to drain and cool slightly.
- Combine bacon, potatoes, extra sharp cheddar and salt in a large bowl, and toss to evenly distribute. Layer potato mixture evenly into Dutch oven and top with cheddar Jack cheese.
- Cover and bake until potatoes are tender and cheese is bubbling, about 40-45 minutes.
- Remove lid and bake for an additional 5 minutes, or until cheese is lightly golden-browned. Garnish with scallions and serve.
