- 2 (15-ounce) cans sliced canned peaches In 100% juice, drained
- 1/4 cup plus 2 tablespoons sugar, divided
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon coarse sea salt
- 1/2 cup butter, cold and cut into 1/2-inch cubes
- 1 cup milk
- Vanilla bean ice cream, for serving
How to Make
- Preheat oven to 375°F. Lightly grease a dutch oven with cooking spray and set aside.
- Combine peaches, 1/4 cup of sugar, cornstarch, cinnamon, ginger, honey, and vanilla in a large bowl and toss to coat. Transfer to prepared dutch oven and set aside.
- Combine flour, remaining sugar, baking powder and salt in a medium bowl. Add butter, and combine using your fingertips or pastry cutter, until mixture resembles coarse crumbs. Pour in milk, and stir until just combined.
- Top peach mixture evenly with large dollops of biscuit batter. Bake until biscuits are golden-brown and peaches are bubbling, about 30-35 minutes.
- Cool cobbler for a few minutes before topping with ice cream and serving.
