
Fink’s Egg Scramble

Ingredients
- 2 eggs
- 1 tsp. sweet cream butter
- 1/4 cup frozen chopped broccoli, or cut spinach, thawed
- 1/4 cup shredded cheese, divided
- Salt and pepper to taste
How to Make
- Thaw your frozen veggies in the microwave for 45 seconds, then let cool for 3 minutes.
- Crack your eggs into a small bowl, making sure there are no shells, and beat until they’re completely scrambled.
- With a grown-up, melt your butter in a small nonstick pan over medium-low heat.
- Add the egg mixture, your choice of veggie, and half your cheese. With a spatula, stir your mixture and cook for about 4 minutes – we want the eggs to set and the cheese to melt. Season with a pinch of salt (and pepper, if you like it!)
- Serve your eggs on a small plate and top with the remaining shredded cheese – this is going to be ooey-gooey and delicious. Serve hot and enjoy!
