
Ground Turkey Sloppy Joe Casserole

Ingredients
- 1 lb ground turkey
- 1 medium yellow onion, diced
- 1 bell pepper, diced
- 1 (15-ounce) can sloppy joe sauce
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 (4-ounce) bags instant mashed potatoes, prepared according to package instructions
- 1 1/2 cups shredded sharp cheddar cheese
- Chopped fresh parsley, for garnish
How to Make
- Preheat oven to 375°F.
- Cook turkey in a large skillet over medium heat, breaking it up into small crumbles with a wooden spoon, until browned and no pink remains, about 5-7 minutes.
- Add onion and pepper and cook for 3-4 minutes, until softened. Stir in sloppy joe sauce, garlic powder, smoked paprika, salt, and black pepper and bring the mixture to a simmer. Cook, stirring occasionally, for 5 minutes.
- Remove from heat and transfer the turkey mixture to a lightly greased 9×13-inch baking dish, spreading it in an even layer. Spoon mashed potatoes over the turkey mixture, spreading into an even layer with a spatula or spoon.
- Top potatoes with cheddar and bake until the cheese is melted and the casserole is golden-brown, about 20 to 25 minutes.
- Remove from the oven and garnish with fresh parsley before serving.
