Cook Time: 120 minutes

Total Time: 135 minutes

Serves: 15 Servings

  • 1 can (10 oz) fire-roasted diced tomatoes with green chilies, undrained
  • 1 pkg. (16 oz) American processed cheese, cut into cubes
  • 1/2 tsp. paprika
  • 1/4 cup chopped jalapeños, or to taste
  • 1 lb. Italian sausage, at room temperature
  • 2 cups biscuit baking mix
  • 1 pkg. (12 oz) shredded sharp cheddar cheese

How to Make:

  1. In a slow cooker, combine tomatoes, American cheese cubes, paprika, and jalapeños. Cook on low for 1–2 hours until hot, stirring occasionally.
  2. Meanwhile, preheat the oven to 350°F. Combine sausage, biscuit mix, and shredded cheddar. Mix well and knead to combine.
  3. Use a small scoop to form 30 1-inch balls and transfer to a parchment-lined baking sheet. Bake for 20–25 minutes or until golden and fully cooked.
  4. When ready to serve, dip meatballs into cheese and enjoy!
