
Street Corn Dip

Ingredients
- 1 cup plain Greek yogurt
- 1/2 cup sour cream
- 1 cup Cotija cheese, crumbled, plus more for garnish
- 2 cups frozen corn, thawed
- 1 (1.25-ounce) packet taco seasoning
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped fresh cilantro, for garnish
- Tortilla chips, for serving
How to Make
- Heat oil in a large skillet over medium-high heat. Add corn, taco seasoning, chili powder, salt, and pepper. Cook, stirring occasionally, until corn is lightly charred, about 5–10 minutes. Remove from heat to cool.
- Meanwhile, combine Greek yogurt, sour cream, Cotija cheese, and lime juice in a large serving bowl. Add the cooled corn mixture and stir to combine.
- Chill dip for at least 30 minutes. When ready to serve, garnish with additional cheese and cilantro. Serve with tortilla chips.
