- 1 lb frozen chicken breasts
- 1 (10-ounce) bottle teriyaki sauce
- 3/4 cup water, divided
- 2 cups white rice, cooked according to package instructions
- 1 (16-ounce) bag stir-fry vegetables
- 1 tablespoon sesame seeds, for garnish
- Sliced fresh green onions, for garnish
How to Make
- Combine chicken, teriyaki sauce, and 1/2 cup of water in a large skillet over medium-high heat. Cover and cook until chicken is fully cooked and an internal temperature of at least 165°F is reached, about 15 to 20 minutes.
- Meanwhile, combine stir-fry vegetables and remaining water in a heat-proof bowl. Cover and microwave on high for 3 to 5 minutes, or until tender, stirring halfway through for even steaming. Remove from microwave and drain any excess water.
- When chicken is done, remove from heat and slice into bite-sized pieces or strips. Transfer vegetables to skillet and toss to coat with teriyaki sauce.
- To serve, divide rice evenly among serving bowls. Top bowls evenly with chicken and vegetables. Garnish with sesame seeds and green onions and serve.
