Teriyaki Chicken Bowls

Ingredients

  • 1 lb frozen chicken breasts
  • 1 (10-ounce) bottle teriyaki sauce
  • 3/4 cup water, divided
  • 2 cups white rice, cooked according to package instructions
  • 1 (16-ounce) bag stir-fry vegetables
  • 1 tablespoon sesame seeds, for garnish
  • Sliced fresh green onions, for garnish

How to Make

  1. Combine chicken, teriyaki sauce, and 1/2 cup of water in a large skillet over medium-high heat. Cover and cook until chicken is fully cooked and an internal temperature of at least 165°F is reached, about 15 to 20 minutes.
  2. Meanwhile, combine stir-fry vegetables and remaining water in a heat-proof bowl. Cover and microwave on high for 3 to 5 minutes, or until tender, stirring halfway through for even steaming. Remove from microwave and drain any excess water.
  3. When chicken is done, remove from heat and slice into bite-sized pieces or strips. Transfer vegetables to skillet and toss to coat with teriyaki sauce.
  4. To serve, divide rice evenly among serving bowls. Top bowls evenly with chicken and vegetables. Garnish with sesame seeds and green onions and serve.
