Yogurt Granola Bowl

Ingredients:
For the granola:
- 1/4 cup coconut oil or olive oil
- 1 tsp vanilla extract
- 1/4 cup honey
- 1/2 tsp ground cinnamon
- Salt, to taste
- 2 cups oats
- 1/2 cup sliced almonds
- 1/2 cup pecans
- 1/4 cup chia seeds
- 1/4 cup flaxseed meal or hemp hearts, optional
For the yogurt bowl:
- 3 cups Greek yogurt, nonfat, plain
- 3 cups frozen unsweetened blueberries
How to Make:
- Preheat oven to 300˚F. Line a baking sheet with parchment paper.
- In a large bowl combine oil, vanilla extract, honey, cinnamon and salt. Add oats, almonds, pecans, chia seeds and, if desired, flaxseed meal. Stir until well mixed.
- Pour mixture onto prepared baking sheet and spread into an even layer. Bake for about 20 minutes, stirring halfway through until lightly golden. Let cool for 30 minutes.
- To serve, top 1/2 cup yogurt with 1/4 cup prepared granola and 1/2 cup blueberries.
- Store the remaining granola in an airtight container for 2 weeks or in the freezer for 3 months.
