Yogurt Granola Bowl

Ingredients:

For the granola:

  • 1/4 cup coconut oil or olive oil
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • 1/2 tsp ground cinnamon
  • Salt, to taste
  • 2 cups oats
  • 1/2 cup sliced almonds
  • 1/2 cup pecans
  • 1/4 cup chia seeds
  • 1/4 cup flaxseed meal or hemp hearts, optional

For the yogurt bowl:

  • 3 cups Greek yogurt, nonfat, plain
  • 3 cups frozen unsweetened blueberries

How to Make:

  1. Preheat oven to 300˚F. Line a baking sheet with parchment paper.
  2. In a large bowl combine oil, vanilla extract, honey, cinnamon and salt. Add oats, almonds, pecans, chia seeds and, if desired, flaxseed meal. Stir until well mixed.
  3. Pour mixture onto prepared baking sheet and spread into an even layer. Bake for about 20 minutes, stirring halfway through until lightly golden. Let cool for 30 minutes.
  4. To serve, top 1/2 cup yogurt with 1/4 cup prepared granola and 1/2 cup blueberries.
  5. Store the remaining granola in an airtight container for 2 weeks or in the freezer for 3 months.
